The Brewery

(Stage Two 2001 onwards)

In the autumn of 2001 we decided to re-arrange the brewery to cater for the increased brew length of 18 gallons. This involved a number of things:

-Building a walk in air conditioned cellar at the rear of the brewery to store all the beer in.

-Converting the old cellar (the converted chest freezer) to a lagering fridge.

-Building/cladding the above with some nicely varnished wood to make it look like a bar to cope with the 2 four tap fonts and beer engine.

-Enclosing the more powerful motorised grain mill within the above in an attempt to reduce the amount of dust flying around the place whilst it's being used.

-Building a new bigger 'Counter-flow-chiller' (CFC) which forms part of the lagging of the new bigger mash tun.

-Utilising a 100 litre keg as the new primary fermenter.

-Building an electronic temperature controller to maintain an accurate and controlled fermentation temperature.
